Breakfast Cookie UPDATE!

Hey, remember those SUPER easy breakfast cookies that I gave you the recipe for? The ones that were so easy to make that it was practically lying to say that I had baked them, but yet the kids absolutely loved them?

Well, I made a few the other day (along with about 60 Pancake Muffins)....


.....and in the process, I found a way to make them better!!

For those of you who missed the original recipe post, I am going to start by posting it below before I move on to the update, which will be at the bottom of this brief repost:

Breakfast Cookies 

What You Will Need:

1.5 Cups uncooked oatmeal
2 Ripe bananas, mashed
1 Cup unsweetened applesauce
1/3rd Cup dried cranberries
1 Tsp vanilla extract
1 Tsp cinnamon
Coconut oil to grease the pan.


Preheat the oven to 350 degrees.

And then put everything in one bowl. It really is that easy!


Then mix it all together.


The Boy Child especially loved the mixing part.


Eventually I told him that it was time to put the mixture on the pan (greased), and... well, I guess I should have been more specific that we were going to take it out of the bowl...


Then he mixed some more.


And some more...


Until I had to wrestle the bowl out of his hands.

Simply place blobs of the mixture onto a greased pan (choose your own cookie size) and bake at 350 degrees for 20-30 minutes.

Super easy, right?

Well, since that was one of my most popular posts, here is an easy update that makes them even healthier than before, but still keeps the recipe easy! 

Recently I switched out the cranberries for some uber healthy dried Goji berries, and then started throwing in a few spoonfuls of chia seeds and flax seeds to add a little Omega 3 and some antioxidants. 


Then, at the last minute, I tossed in a small handful of chocolate chips so that if the kids noticed the texture change, I could blame it on the chocolate, but to be honest they didn't even notice; I think the oats cover up the seeds for the most part.

Alright, well, if you will excuse me now, I need to go clean up the kitchen.


Fun times.

  1. When you freeze batch meals what do you use? I tried plastic containers but they still had freezer burn... And tasted like everything in the freezer. Which would have been fine if the whole freezer had been filled with donuts and chocolate martinis .. ....Which unfortunately, it was not.

    1. I typically just put them in freezer bags. My kids eat them so fast that they don't even have time to get freezer burned!!

      In other news, if you happen to get a freezer full of donuts and chocolate martinis, please invite me over.

New to your blog, had to ask : after browsing I see more than a cpuple mentions of how you're such an absolute blast in the bedroom and then you make sure to make it clear that you've had only a small amount of partners. Using phrases like "I havent been around the block a million times" etc.... I mention it because it was weird to see over and over again that you make such a clear distinction between yourself and anyone who has had a few or more partners than you. Care to explain ? Thank you in advance, eden!

    1. I'm fairly certain that you're just trolling, but on the off chance that you're not, I think you might have taken a few things out of context.

      On this blog, yep, we talk about sex. We talk about how fun it can be to have a life in the bedroom (I don't recall ever saying that I was a blast in the bedroom on here... in fact I wrote an entire post making fun of my bedroom failures), but I also talk a lot about how it's fine to say "no." I've messed around a lot, but I've chosen to say "no" and stop things at a certain point. The context was that you don't have to sleep with everyone. But if you want to, you can. Almost all of my sex posts talk about how you get to choose what you are comfortable with, and no one gets to judge you for it. I haven't slept with many people and that's totally fine. Other people have and that's totally fine too. It's all about self-acceptance and taking a stand on our own comfort level, despite what society is constantly telling is is "wrong," or "right." :)

      And I'm not sure what you mean by "over, and over again...." I think it was in the context of a small handful of posts on the topic of sex? Not bad for a blog 3 years old that deals with sexual trauma recovery :)

      I'm not sure if I "rock" the bedroom, but I definitely have fun. (If you're not having fun, you're not doing it right...)

    4. "I'm a blast in the bedroom" and "I haven't had many partners" are not mutually exclusive. It's possible to be an "absolute blast in the bedroom" and only ever sleep with one person.

  3. I need to make a note and not read posts like this when I'm hungry and stuck at work.

    On the plus side, I have a recipe for this weekend. YAY! :)

    Also, putting the bowl on the baking sheet is TOTALLY something I would have done as a kid. Rock on, Boy Child.
